Veggies Take Center Stage
As reported by Gillie Houston talking about "Food Trends That Will Take 2016 by Storm", it's time for meat to move over.
Now, more than ever, vegetables are taking on the starring roles on many restaurant menus, as chefs are challenging themselves to create from plants alone. Awakening to the cruelty endemic in industrial farming along with high meat prices, fears over hormones, health concerns and the processed-meat cancer scares which won't go away have made vegetable-centric restaurants the new hot commodity in the food world.
And these “vegetable-forward” spots are not just for the vegetarians and vegans of the world. At Al’s Place in San Francisco, recently named Bon Appétit’s Best New Restaurant in America, meat is primarily listed under side dishes, while delicious and complex dishes like sunchoke curry with black lime lead the menu.
Similarly, at Brooklyn’s Semilla, which also made Bon App’s “Hot 10” this year, hardly any meat is included in its seasonal tasting menus, with centrepieces of innovative veggie creations.
More and more people deciding to live like it's heaven on earth :)
